Pulled Chicken Sandwiches

Pulled chicken sandwiches are one of my favorite quick meals. I love how the slow-cooked chicken gets tender and falls apart easily. I sauté some onions and garlic, then add chicken breasts with a mix of chicken broth and barbecue sauce. After a few hours, I shred the chicken and mix it back with the juices. Slow-Cooked Pulled Chicken Method

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup barbecue sauce (your favorite brand)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Buns for serving
  • Coleslaw (optional, for topping)

Instructions:

  1. In a large slow cooker, heat the olive oil over medium heat and sauté the diced onion until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.
  2. Place the chicken breasts in the slow cooker on top of the onions and garlic.
  3. Pour the chicken broth and barbecue sauce over the chicken. Sprinkle the smoked paprika, salt, black pepper, and cayenne pepper (if using) on top.
  4. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded with a fork.
  5. Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine with the juices.
  6. Serve the pulled chicken on buns, topped with coleslaw if desired.

When making slow-cooked pulled chicken, I find that the key to maximum flavor is to let it cook low and slow. If you have time, opt for the low setting to really allow the chicken to absorb all those delicious flavors from the broth and spices.
