Ingredients

  • 1 ¼ cups lukewarm water
  • 1 teaspoon salt
  • 1 Tablespoon sugar or maple syrup
  • 1 Tablespoon yeast
  • 4 cups white or bread flour
  • Olive or grapeseed oil (for coating)
  • Sugar, baking soda, or maple syrup (for boiling)
  • Egg wash (for brushing)
  • Desired seasonings (for topping)

Cooking Instructions

  1. In a bowl, mix together the lukewarm water, salt, sugar, and yeast. Let this mixture sit for about 10 minutes until it becomes frothy.
  2. Add the flour to the yeast mixture and mix until a single dough ball forms. You can do this by hand or use a food processor or stand mixer.
  3. Knead the dough for about 10 minutes by hand or for 90 seconds if using a food processor.
  4. Place the kneaded dough in a lightly oiled bowl, cover it, and let it rise for 40-50 minutes at room temperature, or overnight in the fridge for enhanced flavor.
  5. Once the dough has risen, lightly grease your hands and transfer the dough to a clean surface. Divide it into pieces weighing 100 grams each and shape them into rings by poking a hole in the center and stretching the dough.
  6. In a large pot, bring water to a boil and add sugar, baking soda, or maple syrup. Carefully drop the bagel rings into the boiling water, boiling them for 1 minute on each side or 30 seconds per side for a slightly softer bagel.
  7. Use a slotted spoon to transfer the boiled bagels to a towel-lined pan to drain.
  8. Preheat your oven to 350°F (180°C) or 450°F (230°C). If you prefer a golden sheen, brush the boiled bagels with egg wash and dip them in any desired seasonings.
  9. Place the bagels on a baking sheet lined with parchment paper and bake for 20 minutes at 350°F or 14-18 minutes at 450°F, rotating the pans halfway through if using multiple pans.
  10. Once baked, let the bagels cool on the sheet pans before enjoying.

Extra Tips

When making boiled bagels, I’ve found that the dough texture is key; it should be smooth and elastic. Boiling is an essential step for achieving the classic bagel texture.

Don’t rush the rising process, as it greatly affects the flavor and texture.

If you want a chewier bagel, opt for a longer boiling time.

Experimenting with toppings can also be fun—try everything from sesame seeds to everything bagel seasoning for a delicious twist.

And remember, the best bagels are fresh out of the oven, so enjoy them warm!
