Ingredients
The Lentils:
1/4 cup Toor Dal (split pigeon peas)
1/4 cup Masoor Dal (split red lentils)
1/4 cup Moong Dal (split yellow mung beans)
The Vegetables:
1 cup yellow pumpkin (kaddu), cubed
1/2 cup eggplant (baingan), cubed
1 medium potato, peeled and cubed
1 medium tomato, chopped
1/4 cup fresh fenugreek leaves (methi) or spinach, chopped
The Flavor Base:
1 medium red onion, finely chopped
1 tbsp ginger-garlic paste
2 tbsp avocado oil or ghee
2 tbsp Dhansak masala powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
The Finisher:
1 tbsp tamarind paste (soaked in a little warm water)
1 tsp jaggery or brown sugar
Fine sea salt, to taste
Fresh cilantro for garnish
Directions
- Prep the Lentils: Rinse the toor, masoor, and moong dals thoroughly under cold water until the water runs clear. Soak them together in fresh water for 30 minutes, then drain.
- Pressure Cook the Base: In a pressure cooker or Instant Pot, combine the drained lentils, cubed pumpkin, eggplant, potato, tomato, and chopped fenugreek leaves (or spinach). Add the turmeric powder, a pinch of salt, and 3 cups of water. Pressure cook for 4 to 5 whistles (or 12 minutes in an Instant Pot) until everything is incredibly soft. Let the pressure release naturally.
- Mash to Velvet: Open the cooker and aggressively mash the cooked lentils and vegetables together with a potato masher or the back of a heavy spoon until the mixture is thick, creamy, and uniform. Set aside.
- Sauté the Aromatics: Heat the avocado oil or ghee in a large, heavy-bottomed pot over medium heat. Add the finely chopped red onion and sauté for 6 to 8 minutes until deeply golden and caramelized.
- Bloom the Spices (Crucial Step): Stir in the ginger-garlic paste and cook for 1 minute until the raw smell disappears. Lower the heat and add the Dhansak masala powder and red chili powder. Toast the spices in the oil for 30 seconds until highly fragrant.
- Combine and Simmer: Pour the mashed lentil and vegetable mixture directly into the spiced onion base. Stir well to combine, adding a splash of hot water if the stew is too thick.
- Balance the Flavors: Stir in the tamarind paste, jaggery, and fine sea salt to taste. Let the Veg Dhansak simmer gently on low heat for 10 minutes so the sweet, sour, and spicy flavors marry perfectly.
- Garnish and Serve: Remove from the heat, garnish heavily with fresh cilantro, and serve hot alongside caramelized brown rice or warm whole wheat roti!
Notes
- Vegetable Variations: This is a highly adaptable "clean out the fridge" recipe. You can easily add cubed bottle gourd (lauki), sweet potatoes, or carrots to the pressure cooker.
- Storage: Store leftovers in an airtight glass container in the refrigerator for up to 5 days. Dhansak famously tastes even better the next day as the robust spices continue to develop.
- Vegan Option: Ensure you use avocado oil or coconut oil instead of ghee to keep this dish completely plant-based.
