Ingredients
1 1/2 cups finely blanched almond flour
1 tbsp granulated monk fruit sweetener (or erythritol)
2 tsp baking powder
1/4 tsp fine sea salt
3 l arge eggs, room temperature
1/4 cup unsweetened almond milk
3 tbsp unsalted butter or coconut oil, melted and slightly cooled
1 tsp pure vanilla extract
For Garnish: Sugar-free maple syrup, fresh raspberries, and a pat of butter
Directions
- Preheat the Iron: Plug in your waffle maker and let it preheat to a medium-high setting.
- Whisk the Dry Ingredients: In a medium mixing bowl, whisk together the almond flour, monk fruit sweetener, baking powder, and sea salt, ensuring there are no large clumps of almond flour.
- Combine the Wet Ingredients: In a separate smaller bowl, vigorously whisk together the eggs, unsweetened almond milk, melted butter, and vanilla extract until completely smooth and slightly frothy.
- Mix the Batter: Pour the wet ingredients directly into the dry almond flour mixture. Use a silicone spatula to gently fold everything together until a thick, uniform batter forms.
- Let it Rest (Crucial Step): Allow the batter to rest undisturbed on the counter for 3 to 5 minutes. This gives the almond flour time to fully hydrate and thicken, which prevents the waffles from crumbling later.
- Grease and Pour: Generously grease the preheated waffle iron grids with non-stick cooking spray, coconut oil, or melted butter. Pour the rested batter into the center of the iron (amount depends on your specific iron size) and close the lid.
- Bake to Perfection: Let the waffle cook for 4 to 6 minutes, or until the steam stops completely and the waffle is beautifully golden brown and crisp on the outside. Carefully remove it with a silicone fork or tongs.
- Serve: Place your stunning, healthy Keto Waffles onto a warm plate. Top generously with grass-fed butter and sugar-free syrup, and serve immediately!
Notes
- Dairy-Free Option: Simply use melted coconut oil in place of the butter, and ensure your almond milk is plain and unsweetened.
- Storage and Reheating: These waffles freeze exceptionally well! Let them cool completely on a wire rack, then freeze them in a zip-top bag with parchment paper between layers for up to 3 months. Pop them straight into a toaster from frozen to regain their crispy edges.
- Flavor Variations: Fold in ½ tsp of ground cinnamon or a handful of sugar-free chocolate chips into the batter before resting for a phenomenal sweet variation.
