  • 2 tbsp fresh cilantro, chopped

  • For the Tempering (Tadka):

  • 1 tsp avocado oil or ghee

  • 1/2 tsp black mustard seeds

  • 1 sprig of fresh curry leaves (about 8-10 leaves)

  • 1 dried red chili, broken in half

  • A tiny pinch of asafoetida (hing)

Directions

  • Cook the Pumpkin: Place the coarsely grated yellow pumpkin in a small saucepan with about 2 tablespoons of water. Cover and steam over medium-low heat for 4 to 5 minutes until the pumpkin is tender but not mushy. (Alternatively, microwave it in a covered bowl for 2 minutes). Let the cooked pumpkin cool completely.
  • Whisk the Yogurt (Crucial Step): While the pumpkin cools, place the plain yogurt in a medium mixing bowl. Whisk it vigorously until it is completely smooth, creamy, and free of any lumps.
