Ingredients:
– 2 pounds of lean pork loin
– 4 cloves of garlic, minced
– 1 lemon, juiced
– 2 tablespoons of olive oil
– Salt and pepper to taste
Instructions:

2. Now, let’s prepare our pork loin. Place it on a cutting board and trim off any excess fat if desired.

Use a meat thermometer inserted into the thickest part of the pork loin (without touching bone) – it should read around 145°F (63°C). This will ensure a juicy and tender result when we’re finished. If not yet at this temperature, continue cooking for another few minutes.
11. Once your prosforo has reached its desired internal temperature, remove it from the oven and let it rest for about 10 minutes before slicing.
