1. Start by preheating your oven to 375°F (190°C).
2. Now, let’s prepare our pork loin. Place it on a cutting board and trim off any excess fat if desired.

10. Ah, the aromas are absolutely mouthwatering! Now is a great time to take a peek and see how our prosforo is coming along. Use a meat thermometer inserted into the thickest part of the pork loin (without touching bone) – it should read around 145°F (63°C). This will ensure a juicy and tender result when we’re finished. If not yet at this temperature, continue cooking for another few minutes.
11. Once your prosforo has reached its desired internal temperature, remove it from the oven and let it rest for about 10 minutes before slicing.
