Ingredients for the samp

  • 500g of soaked samp,

  • diced pepper,

  • a spoon of Rama,

  • ⅕ spoon of creamer

  • 1 finely-chopped onion

  • aromat

  • 2 medium potatoes (diced)

  • vegetable oil

  • 4 pieces of chicken

  • mixed herbs

  • salt and pepper

  • garlic powder

  • tomato sauce

Directions

  • Add the samp to a pot and boil for two hours, after which you add the onions, peppers, and potatoes, then continue to cook for another forty minutes.
  • Add the creamer and Rama and cook for another ten minutes.
  • Place the chicken pieces in a bowl and add the salt, pepper, garlic powder, and tomato sauce. Let the chicken marinate for about two hours in the fridge.
  • Preheat your oven to 350 degrees Fahrenheit, grease your oven pan, and oven-bake the chicken.

Samp with Potatoes, Veggies, Beef, and Beans

Ingredients
  • 1 cup of samp,
  • ¼ cup of olive oil,
  • 1 cup of beans,
  • 2 teaspoons of salt,
  • 2kg of beef,
  • a medium green pepper (diced),
  • 1 tablespoon of cinnamon,
  • 2 medium-sized onions (diced),
  • 1 large potato,
  • 2 tablespoons of coriander powder,
  • 4 beef stock cubes,
  • 1 cup of mixed veggies,
  • 1 squash (chopped).
Guide
  1. Boil the beans and the samp separately for five hours (add half a teaspoon of salt to each). Soak the beans and samp in separate bowls overnight.
  2. Cut the beef into bite-sized pieces. Add a teaspoon of salt and boil it for about 45 minutes.
  3. Pour the olive oil into a pot and allow it to heat. Then, add the onions, pepper, and squash. Sauté until golden brown, add the beef (do not include the beef stock).
  4. Add the coriander powder, two beef stock cubes, and cinnamon. Allow the mix to simmer on medium heat while stirring occasionally. Add the veggies when the beef is tender and let them simmer till they cook.
  5. Mix the samp with the beans, add the remaining two stock cubes, and boil for twenty minutes. (Ensure the water level is just below the samp/beans level.
  6. When the samp and beans are cooked, add the beef mix to the samp and beans, and stir to combine.

Yellow Samp (recipe 1)

Ingredients
  • 1kg of white samp,
  • 1 tablespoon of salt,
  • 1 tablespoon of food coloring,
  • 1 packet of creamy mushroom soup,
  • 2 large potatoes,
  • 2 liters of water.
Guide
  1. Wash the samp well and boil it with water over low heat. As the water in the samp dries up, add the potatoes and food coloring.
  2. Add the creamy mushroom soup and the salt. Mash and combine. Serve with any meat of your choice.

Yellow Samp (recipe 2)

Ingredients
  • 1 teaspoon of curry powder,
  • 1 kg of samp,
  • 1 large onion (diced),
  • 2 tablespoons of olive oil,
  • 2 potatoes (peeled and chopped),
  • 1 large carrot (peeled and diced),
  • water,
  • 1 sachet of Benny chicken stock powder.
Guide
  1. Rinse the samp thoroughly, boil it under medium heat till it is well-cooked, then add the Benny spice.
  2. Heat the oil in a pan, and add the onions and curry powder. Sauté till it begins to caramelize. Afterward, add the carrots and sauté for five minutes. (Do this step under low heat).
  3. Pour the onions and carrots sauce into the samp. Then, mash and stir the mix.

Samp with Potatoes and Beans

Ingredients
  • 2 large potatoes,
  • 2 medium tomatoes (chopped),
  • salt,
  • 2 tablespoons of vegetable or olive oil,
  • 1 vegetable stock cube,
  • 3 teaspoons of curry powder,
  • 500 g of sugar beans (rinsed and soaked overnight),
  • 500 g of samp (rinsed and soaked overnight).
Guide
  1. Drain the water from the samp and beans and mix them both. Then add seven cups of water, and simmer under medium heat till they become soft. Add a pinch of salt, and keep adding pinches till you get the desired flavor.
  2. In a pan, sauté the onions in olive oil until they become semi-transparent.
  3. Then add the curry powder, tomatoes, vegetable stock cubes, half a cup of water, and potatoes to the sautéed onions. Cook until the potatoes are fluffy.
  4. Drain the samp and beans. Then, add the mixture. Simmer under low heat while you stir. Serve when you are done combining.
