Buckeyes Recipe

To make delicious Buckeyes, I mix 1 cup of creamy peanut butter with 1 cup of powdered sugar and a teaspoon of vanilla extract until smooth. I then form the mixture into small balls and freeze them. After melting chocolate chips with a bit of coconut oil, I dip each ball in the chocolate and sprinkle with sea salt. These treats are a nod to Ohio’s culture! Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups chocolate chips
  • 1 tablespoon coconut oil (optional for smoother chocolate)
  • Sea salt (for sprinkling)

Instructions:

  1. In a medium-sized mixing bowl, combine the peanut butter, powdered sugar, and vanilla extract. Mix until smooth and well combined.
  2. Using your hands, form the mixture into small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  3. Once all the balls are formed, place the baking sheet in the freezer for about 30 minutes to firm up.
  4. While the peanut butter balls are chilling, melt the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until fully melted. If you want a smoother consistency, mix in the coconut oil.
  5. Remove the peanut butter balls from the freezer. Dip each ball into the melted chocolate, ensuring it’s completely coated, then return it to the parchment-lined baking sheet.
  6. After all the balls are coated, sprinkle a small pinch of sea salt on top of each one before the chocolate sets.
  7. Place the baking sheet back in the refrigerator for another 30 minutes, or until the chocolate is fully hardened.

When making these Chocolate Peanut Butter Treats, I’ve found that the key to getting that perfect balance of flavors is to use high-quality chocolate chips.

I prefer semi-sweet for a nice contrast to the sweetness of the peanut butter mixture, but you can experiment with dark or milk chocolate as well.

Additionally, if you want to get creative, try adding crushed nuts or sprinkles on top before the chocolate hardens.

These treats are always a hit at gatherings, and I love that they’re so easy to whip up!
