Whipped Feta Topped with Sweet and Spicy Tomato Chutney Recipe

Ingredients:

whipped feta:

  • 8 oz feta, drained (we used Holmestead Feta)
  • ¾ cup Greek yogurt
  • Zest of one lemon
  • 2 tbsp extra virgin olive oil

sweet & spicy tomato chutney:

  • Makes 1 cup
  • 2 cups grape tomatoes, diced
  • 2 cups yellow onions, diced
  • 1 jalapeno pepper, deseeded and chopped
  • 1 tbsp butter
  • 3/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup

grilled naan:

  • 24 Mini Naan
  • Olive oil
  • Sea salt to taste

Instructions:

whipped feta:

  1. Combine the feta, Greek yogurt, and lemon zest in the bowl of a food processor using the blade.
  2. Blend, and while the processor is running, drizzle olive oil through the top opening, until the feta is whipped to a smooth mixture.
  3. Top with sweet & spicy tomato chutney (recipe below).

sweet & spicy tomato chutney:

  1. In a large sauté pan, melt butter.
  2. Add onions, jalapeno pepper, and tomatoes.
  3. Sauté for 3 minutes, deglaze the pan with red wine vinegar and Dijon mustard for a few more minutes.
  4. Add brown sugar, maple syrup and let simmer for 30 or 35 minutes on low heat while stirring occasionally until the consistency of jam.
  5. Cool then place in a jar and refrigerate.

grilled naan:

  1. In a medium skillet or BBQ, drizzle olive oil on the Naan.
  2. Finish with salt and grill until nice and crispy.

to serve:

Spread the whipped feta on the grilled naan and top with a generous spoonful of the tomato chutney.
