Ingredients:

For Pie Filling:

  • Pie dough for a 9-inch single-crust pie, pre-fitted and crimped
  • 4 to 6 cups fresh strawberries (approx. 2 lbs.), cleaned, de-stemmed, and quartered
  • 3 tbsp plus ¼ cup granulated sugar, set apart
  • 2 tbsp balsamic vinegar
  • ¾ cup brown sugar
  • ¼ cup ground arrowroot (alternatively, 3 tbsp cornstarch)
  • 3 grinds fresh black pepper (or one pinch ground pepper)
  • ½ tsp salt

For Streusel Topping:

  • 1 cup all-purpose flour
  • 3 tbsp packed brown sugar
  • 4 tsp granulated sugar
  • ¼ tsp salt
  • 6 tbsp unsalted butter, room temperature, cut into ½-inch cubes

Directions:

  1. Preparation: Chill your 9-inch pie pan lined with pastry and with crimped edges.
  2. Macerating Strawberries: Sprinkle 3 tbsp sugar over strawberries. Gently stir and let it sit at room temperature for 30 minutes to an hour.
  3. Making the Streusel: In a bowl, mix flour, brown sugar, granulated sugar, and salt. Blend in butter using fingertips until the mixture resembles coarse crumbs. Chill until use.
  4. Oven Preparation: Position oven racks at bottom and center. Put a rimmed baking sheet on the bottom rack. Preheat oven to 400°F.
  5. Pie Filling: Combine the remaining granulated sugar, brown sugar, arrowroot, pepper, and salt. Drain strawberries, mix in balsamic vinegar, then combine with the dry mix.
  6. Assembling: Pour strawberry mixture into the pie crust. Evenly sprinkle the streusel over the top.
  7. Baking: Set pie on preheated baking sheet on the oven’s bottom rack. Bake for 15-20 minutes until the pastry sets. Reduce heat to 350°F, shift the pie to the center rack, and bake until golden brown and bubbling (40-50 minutes).
  8. Cooling: Let the pie cool thoroughly on a wire rack (around 2-3 hours) before serving.
  9. Storage: The pie can be refrigerated for up to 5 days or kept at room temperature for 2 days.
