Slow Cooker Sticky Toffee Pudding Recipe

Slow Cooker Sticky Toffee Pudding is a classic British dessert that’s perfect for those chilly days when you crave something warm and comforting. This version, adapted from a recipe by the BBC Good Food, is made even more effortless by using a slow cooker, ensuring a perfectly moist and tender pudding every time.

Ingredients:

  • 250g pitted dates, chopped
  • 100g butter, plus extra for greasing
  • 4 tbsp treacle
  • 1 tsp vanilla extract
  • 250g light brown soft sugar
  • 300ml double cream
  • 2 eggs, lightly beaten
  • 200g self-raising flour
  • 1 tsp bicarbonate of soda
  • Vanilla ice cream, for serving

Method:

  1. Begin by placing the dates in a heatproof bowl and pouring over 150ml of boiling water. Allow them to soak for 30 minutes.
  2. Grease a 1-litre pudding basin with butter and line the base with baking paper.
  3. In a medium-sized pan, combine half the butter, half the treacle, vanilla extract, 75g of the sugar, and the cream. Cook this mixture over medium heat, stirring continuously, for about 4-5 minutes or until the sugar has dissolved. Increase the heat and let it bubble for an additional three minutes, then whisk in a pinch of salt. Transfer a third of this sauce into the previously prepared basin.
  4. In a separate bowl, cream together the remaining butter, treacle, sugar, and the beaten eggs. Gently fold in the flour, bicarbonate of soda, ¼ tsp of salt, soaked dates, and their soaking liquid.
  5. Spoon this mixture into the basin, ensuring you leave a 1cm gap at the top. Cover the basin with a double layer of baking paper and foil, ensuring you make a pleat in the middle to allow the pudding to expand. Secure this covering with kitchen string.
  6. Set your slow cooker to its low setting. Place the basin inside and add enough boiling water so it comes halfway up the sides of the basin. Cover and let it cook for 7-8 hours.
  7. Once done, run a knife around the edge of the pudding to loosen it, then turn it out onto a serving plate. Reheat the remaining sauce and pour it over the pudding.
