Sheet Pan Pancakes with Maple Pecan Crumble

Turn the classic pancake breakfast into an easy and delicious sheet pan meal with a nutty crunch and a decadent glaze!

Ingredients:

For the Pancakes:

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 3/4 cups buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract

For the Maple Pecan Crumble:

  • 1 cup chopped pecans
  • 3 tbsp maple syrup
  • 2 tbsp butter, melted
  • 1/2 tsp cinnamon
  • Pinch of salt

For the Maple Syrup Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • 1/4 cup maple syrup
  • 2 tbsp milk or heavy cream
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preparation: Preheat your oven to 425°F (220°C). Grease a large sheet pan or line with parchment paper.
  2. Pancake Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  3. Maple Pecan Crumble: In a medium-sized bowl, combine the chopped pecans, maple syrup, melted butter, cinnamon, and a pinch of salt. Mix until the pecans are fully coated.
  4. Assemble: Pour the pancake batter into the prepared sheet pan, spreading it evenly with a spatula. Sprinkle the maple pecan crumble over the top.
  5. Bake: Place the sheet pan in the oven and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean and the edges are slightly golden.
  6. Maple Syrup Cream Cheese Glaze: While the pancakes are baking, prepare the glaze. In a medium-sized bowl, beat together the softened cream cheese, maple syrup, milk or heavy cream, vanilla extract, and a pinch of salt until smooth and creamy.
  7. Serve: Once the pancakes are done, remove from the oven and allow to cool slightly. Drizzle with the maple syrup cream cheese glaze, cut into squares, and serve warm.
