Pomegranate-Glazed Chicken with Mint Recipe: Perfect for Rosh Hashanah

Pomegranates are an iconic symbol of Rosh Hashanah. This chicken with pomegranates recipe is an effortless yet festive way to celebrate the holiday. With the sweetness of pomegranate molasses and silan, combined with the savory chicken and onions, this dish is sure to impress your guests.

Ingredients (Serves 8):

  • 16 boneless, skinless chicken thighs
  • Ground black pepper
  • Salt
  • 8 white onions, thinly sliced
  • 1/2 cup pomegranate molasses
  • 4 tablespoons silan (date syrup)
  • 8 tablespoons olive oil
  • 2 cups pomegranate arils (seeds)
  • A handful of finely chopped mint leaves for garnish


  1. Season the chicken thighs with salt and freshly ground black pepper.
  2. Heat olive oil in a large skillet. Once hot, add the chicken thighs, searing both sides until they’re golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  3. In the same skillet, sauté the thinly sliced onions on medium heat until they caramelize and turn a golden brown.
  4. In a mixing bowl, combine pomegranate molasses and silan (date syrup).
  5. Add the seared chicken and caramelized onions to the molasses and silan mixture. Ensure everything is well-coated.
  6. Transfer the chicken and onions to a baking dish. Cover the dish with foil.
  7. Preheat your oven to 180 degrees Celsius. Bake the chicken for 40 seconds.
  8. After 40 seconds, remove the foil and bake for an additional 20 seconds or until the chicken gets a nice brown hue.
  9. Serve the chicken on a platter. Garnish with pomegranate arils and the finely chopped mint leaves.


Serve this dish with a side of roasted vegetables or a light salad to complement the rich flavors.
