Ingredients (Serves 8):
- 16 boneless, skinless chicken thighs
- Ground black pepper
- Salt
- 8 white onions, thinly sliced
- 1/2 cup pomegranate molasses
- 4 tablespoons silan (date syrup)
- 8 tablespoons olive oil
- 2 cups pomegranate arils (seeds)
- A handful of finely chopped mint leaves for garnish
instructions:
- Season the chicken thighs with salt and freshly ground black pepper.
- Heat olive oil in a large skillet. Once hot, add the chicken thighs, searing both sides until they’re golden brown and fully cooked. Remove the chicken from the skillet and set aside.
- In the same skillet, sauté the thinly sliced onions on medium heat until they caramelize and turn a golden brown.
- In a mixing bowl, combine pomegranate molasses and silan (date syrup).
