  • ½ cup panko bread crumbs

  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt, divided
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon melted butter
  • 4 salmon fillets (6-ounce each, skinless)
  • 2 tablespoons Dijon mustard
  • 4 lemon slices (for serving)

Instructions:

  1. Preparation: Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper and lightly grease it with olive oil.
  2. Prepare the Crust: In a shallow dish, combine panko, Parmesan, parsley, garlic powder, ¾ teaspoon of salt, and pepper. Add the melted butter and 1 tablespoon of olive oil, mixing until the panko is well-coated.
  3. Prep the Salmon: Season each salmon fillet with the remaining ¼ teaspoon of salt. Next, spread a thin layer of Dijon mustard on the top and sides of each fillet.
  4. Coat the Salmon: Gently press each mustard-coated salmon fillet into the panko mixture, ensuring it’s fully coated on all sides.
  5. Baking: Place the breaded salmon fillets on the prepared sheet pan. Drizzle the remaining tablespoon of olive oil over them. Bake for about 8-13 minutes, adjusting based on the thickness of the fillets.
