  • 2 cups dried black beans
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 1 red capsicum
  • 4 cloves garlic, crushed

  • 2 tsp ground cumin
  • 1 tsp chilli powder
  • 2 cups vegetable stock
  • 2 cups water
  • 2 bay leaves
  • 1 x 200g can chipotle sauce
  • To Serve:
  • 125g sour cream
  • 1 avocado, diced
  • 1 fresh red chilli, finely sliced
  • 1/3 cup fresh coriander
  • 1 lime, quartered

Method:

  1. Pre-soak the Beans: Begin by soaking the black beans in water. This should be done for a minimum of 4 hours, though leaving them overnight is optimal.
  2. Sauté the Vegetables: In a large casserole dish, heat up the olive oil on medium heat. Once hot, add the onions and sauté for approximately 5 minutes. Incorporate the red capsicum and continue to cook for an additional 5 minutes. Stir in your aromatic ingredients next: garlic, oregano, and the other spices. Cook this mixture for about 1-2 minutes or until it releases a fragrant aroma.
  3. Combine Main Ingredients: After draining the pre-soaked beans, add them to your casserole dish. Follow this by adding the vegetable stock, water, bay leaves, and chipotle sauce. As per your taste preference, season with salt and pepper.
  4. Simmer: Cover your casserole dish and let everything cook for 1-2 hours. The beans should become tender, with the exact cooking time varying based on the age and size of your beans.
