Ingredients:

  • 2 lb boneless chicken breasts
  • 28 ounces crushed tomatoes
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon balsamic vinegar

Instructions:

  1. Activate the sauté function on your Instant Pot.
  2. Incorporate chicken, garlic, and onion into the pot and sauté for 4 minutes.
  3. Add the crushed tomatoes over the chicken.
  4. Mix in all the remaining ingredients.
  5. Secure the Instant Pot lid.
  6. Adjust the Instant Pot setting to “Manual” on high pressure for 20 minutes. Once the cooking time has elapsed, allow the pressure to release naturally for 10 minutes.
  7. Unlock the Instant Pot lid and shred the chicken.
