Grilled P.E.I. Oysters with Citrus Herb Butter and Frites

  • 24 P.E.I. oysters

  • 4 tbsp soft butter
  • 2 tbsp parsley, chopped
  • 2 tbsp chives, chopped
  • Pinch of salt and pepper
  • Zest of ½ lemon
  • Juice of 1 lemon

For the Spicy Garlic Aioli:

  • ½ cup mayonnaise
  • 1 clove garlic, minced
  • 1 tsp lime juice
  • 1 tsp hot sauce
  • Salt and pepper to taste
  • 2 tsp olive oil
  • French fries of your choice to serve with


  1. Prepare the Oysters: Begin by shucking the 24 oysters. Remove the top shell and carefully loosen the muscle beneath the oyster.
  2. Grill the Oysters: Preheat your grill to medium-high heat. Apply a dash of the melted citrus herb butter over each oyster. Place the oysters directly on the grill and let them cook for 3 to 5 minutes or until they start to change color.
