Servings: 4
Preparation time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes
Ingredients:
- 2 O Organics® boneless, skinless chicken breasts
- Salt and pepper, to taste
- 8 cups O Organics® mixed salad greens
- 1 cup fresh blueberries
- 1/2 cup goat cheese, crumbled
- 1/2 cup pecans, toasted
- 1/4 cup O Organics® balsamic vinaigrette dressing (or more to taste)
Instructions:
- Prepare the Grill: Preheat the grill to medium-high heat. If using a charcoal grill, ensure the coals are white and ash-covered.
- Season the Chicken: Lightly season both sides of the chicken breasts with salt and pepper.
- Grill the Chicken: Place the chicken breasts on the grill. Cook for 5-6 minutes per side or until the internal temperature reaches 165°F and the chicken has grill marks. Remove the chicken from the grill and let it rest for a few minutes.
- Slice the Chicken: Once rested, slice the chicken breasts into thin strips.
- Assemble the Salad: In a large bowl, combine the mixed salad greens, fresh blueberries, crumbled goat cheese, and toasted pecans.
- Add the Chicken: Place the sliced grilled chicken on top of the salad.
- Dress and Serve: Drizzle the balsamic vinaigrette over the salad. Toss gently to combine, ensuring all ingredients are lightly coated with the dressing. Serve immediately.
Tips:
- For added flavor, marinate the chicken breasts in some balsamic vinaigrette for about 30 minutes before grilling.
- Toasting the pecans can be done in a dry skillet over medium heat, stirring frequently until they’re fragrant. This usually takes about 3-5 minutes.
- Feel free to add more of your favorite salad ingredients like dried cranberries, avocado slices, or cherry tomatoes.
