  1. Preparation: Preheat the oven to 190°C or Gas Mark 5. Prepare two baking sheets by lining them with greaseproof paper or baking parchment.
  2. Butter & Sugar: In a saucepan, gently melt the butter over low heat. In a separate mixing bowl, combine the caster and light brown sugar. Pour in the melted butter, mixing thoroughly with a wooden spoon. Add in the beaten egg and vanilla extract, mixing until combined.
