Good Company, along with its sister locations Old 86 and Prosperity Social Club, is offering nostalgic ice cream sandwiches inspired by classic flavors like root beer float and creamsicle. Pastry Chef Joe Holmes has shared the recipe for these delightful treats.
The process involves making a root beer-flavored semifreddo and sandwiching it between homemade root beer wafers. This recipe seem delicious and worth the time and effort they demand.
Here’s how to make the Root Beer Semifreddo and Root Beer Sandwich Wafers:
Root Beer Semifreddo:

Ingredients:
- 10 oz. heavy cream
- 2.5 tsp vanilla bean paste
- 2 oz. egg yolks
- 3 oz. egg whites
- 3 oz. sugar
- 1 oz. root beer oil
- 2.5 tsp. corn syrup
Instructions:
- Whip heavy cream, corn syrup, vanilla, and root beer oil to a soft/medium peak. Set aside.
- Warm egg yolks and half of the sugar over a water bath until about 160F. Be careful not to overheat.
- Whip the yolk mixture to full volume, and let it cool back to room temperature.
- Gently fold the yolk mixture into the whipped heavy cream mixture.
- Whip egg whites until foamy, gradually adding the remaining sugar.
- Gently fold the meringue into the mousse mixture.
- Pipe or spoon into molds, freeze until firm, then cut into desired size.
Root Beer Sandwich Wafers:

Ingredients:
- 8 oz. all-purpose flour
- 1 tsp. cocoa powder
- 2 tsp. baking powder
- 1 tsp. salt
- 4 oz. sugar
- 5 oz. butter
- 1 oz. egg yolk
- 2 tsp. vanilla
- 1 oz. root beer oil
Instructions:
- Mix and sift flour, cocoa, baking powder, and salt. Set aside.
- Cream sugar and room temperature butter until light and fluffy.
- Add egg yolks, vanilla, and root beer flavoring to the creamed mixture until combined.
- Gradually add dry ingredients in three portions, mixing just to incorporate.
- Press the dough onto a baking sheet, cover, and refrigerate for at least 30 minutes.
- Roll out the dough to desired thickness (about 1/8″), then rest for 30 minutes.
- Cut dough into desired shapes and bake at 350°F for around 5 minutes.
- The wafers should be baked but still slightly soft to the touch.
- Cool before storage.
