  • 1 can (14 oz/400 ml) full-fat coconut milk
  • 1-inch piece of lemongrass, minced finely
  • 1-inch piece of ginger, grated
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 2 tbsp lime juice
  • ¼ tsp chile flakes
  • 1 Scallion, diced, for serving

Directions:

  1. Prepare Shrimp Seasoning: In a mixing bowl, combine shrimp with salt, black pepper, paprika, and 1 minced garlic clove. Mix until shrimp are well-coated. Set aside.

  3. Prepare Aromatics: Reduce the heat to low and in the same pan, add the remaining minced garlic, grated ginger, and finely chopped onion. Sauté until they become soft and fragrant, approximately 3 minutes.
  4. Prepare Coconut Curry Sauce: Pour the coconut milk into the pan. Mix in the fish sauce, sugar, and lime juice, and allow the mixture to simmer for 2 minutes. Introduce the finely minced lemongrass, diced scallions, and chile flakes. Let the curry simmer for another 2 minutes, allowing the flavors to meld.
  5. Combine Shrimp and Curry: Return the seared shrimp to the pan. Add cilantro and stir well, letting everything simmer for an additional minute to ensure the shrimp are thoroughly heated.
  6. Garnish and Serve: Sprinkle additional cilantro on top, accompanied by fresh red chile rings (if desired) and a pinch of freshly ground black pepper. Serve immediately, preferably alongside jasmine rice.
