  • ½ cup freshly grated Parmigiano-Reggiano cheese
  • ⅓ cup fresh basil leaves
  • Kosher salt and chili flakes, adjusted to taste
  • 1 loaf of rustic bread (sliced and either lightly grilled or toasted)
  • Blue corn tortillas and radishes for dipping (optional but recommended)


  1. Blend Base Ingredients: Using a food processor or blender, pulse the cherry tomatoes, garlic cloves, and almonds or pine nuts together until they’ve just broken down.
  2. Add Oil: Keep the blender or food processor running, and steadily drizzle in the extra-virgin olive oil. Continue blending until the mixture is smooth and the oil is fully incorporated.
  3. Incorporate Cheese & Basil: Add in the freshly grated Parmigiano-Reggiano cheese and fresh basil leaves. Pulse several times until they’re just combined, ensuring the dip maintains its vibrant red color with contrasting green flecks.
