Summer is synonymous with vibrant, ripe tomatoes, and what better way to celebrate these juicy, sun-kissed delights than with a hearty tomato dip? As cherry tomato vines sway heavy with fruit, it becomes a task to incorporate them in different dishes. This tomato-basil dip is the perfect solution. Bursting with the flavors of summer and requiring no cooking, it’s an ideal treat for those warm afternoons when you want a quick and tasty delight.

Servings: 10-12

Ingredients:

  • ¾ pound (or approximately 2½ cups) of red cherry tomatoes
  • 3 garlic cloves, both peeled and smashed
  • ⅓ cup of either whole almonds or pine nuts (ensure they’re lightly toasted)
  • ½ cup extra-virgin olive oil
  • ½ cup freshly grated Parmigiano-Reggiano cheese
  • ⅓ cup fresh basil leaves
  • Kosher salt and chili flakes, adjusted to taste
  • 1 loaf of rustic bread (sliced and either lightly grilled or toasted)
  • Blue corn tortillas and radishes for dipping (optional but recommended)

Instructions:

  1. Blend Base Ingredients: Using a food processor or blender, pulse the cherry tomatoes, garlic cloves, and almonds or pine nuts together until they’ve just broken down.
  2. Add Oil: Keep the blender or food processor running, and steadily drizzle in the extra-virgin olive oil. Continue blending until the mixture is smooth and the oil is fully incorporated.
  3. Incorporate Cheese & Basil: Add in the freshly grated Parmigiano-Reggiano cheese and fresh basil leaves. Pulse several times until they’re just combined, ensuring the dip maintains its vibrant red color with contrasting green flecks.
  4. Season: For the final touch, season your dip with kosher salt and chili flakes. Adjust according to your taste preference.
  5. Serve: Transfer the dip to a serving bowl. Accompany it with slices of rustic bread, ensuring they’re lightly grilled or toasted. If you’re in the mood for variety, serve the dip alongside blue corn tortillas and crisp radishes. Dive in and enjoy the rich and tangy flavors of summer!
