- 2 handfuls baby spinach

Instructions:
- Prepare the Tortillas: Start by making one tortilla at a time.
- Melt Butter: In a medium nonstick pan over medium heat, melt half of the butter.
- Add Eggs: Pour in half of the beaten eggs. Quickly top it with a tortilla. Gently press the tortilla so that a portion of the egg mixture flows over the top side.
- Add Spinach and Cheese: After a minute, sprinkle half of the spinach and cheese over the tortilla.
- Cover and Cook: Put a lid on the pan and let it cook for another 2 minutes. By this time, the spinach should have wilted, and the cheese melted to perfection.
