Egg, Greens and Cheese Tortilla: A Perfect Lunchbox Treat

  • 2 tsp butter
  • 4 eggs (lightly beaten with a pinch of salt)
  • 2 large (8- to 10-inch) flour tortillas
  • 2 handfuls baby spinach
  • ½ cup shredded gruyère (or any other hard cheese that melts well)


  1. Prepare the Tortillas: Start by making one tortilla at a time.
  2. Melt Butter: In a medium nonstick pan over medium heat, melt half of the butter.
  3. Add Eggs: Pour in half of the beaten eggs. Quickly top it with a tortilla. Gently press the tortilla so that a portion of the egg mixture flows over the top side.
  4. Add Spinach and Cheese: After a minute, sprinkle half of the spinach and cheese over the tortilla.
  5. Cover and Cook: Put a lid on the pan and let it cook for another 2 minutes. By this time, the spinach should have wilted, and the cheese melted to perfection.
  6. Fold or Roll: You can now fold the tortilla, much like an omelette, and pack it as is for lunch. Alternatively, slide it onto a cutting board, let it cool a bit, then roll it up. Slice it into suitable pieces to fit in your lunchbox.
  7. Repeat: Use the remaining ingredients to make the second serving.

Packing Tip:

To keep the tortilla fresh and prevent sogginess, wrap it in parchment paper or foil before placing it in the lunchbox.
