Coconut-Kale Smoothie with Ginger and Mint

  • 1-inch piece of fresh ginger, peeled and chopped
  • A handful of fresh mint leaves (about 10-12 leaves)
  • 1/2 cup coconut water (adjust for desired consistency)
  • 1 tablespoon chia seeds (optional for added nutrition)
  • 1 tablespoon honey or agave syrup (adjust to taste)
  • 1/2 frozen banana
  • Juice of 1 lime
  • Ice cubes (optional)
  • Shredded coconut for garnish (optional)


  1. Preparation: Make sure you’ve washed the kale leaves thoroughly, removing any dirt or grit. Remove the stems from the kale and tear the leaves into smaller pieces.
  2. Blend the Greens: Start by blending the kale, mint, and coconut water in your blender until you get a smooth green liquid. This helps to ensure that the kale is thoroughly blended and you don’t end up with chunky bits.
  3. Add Remaining Ingredients: Add the coconut milk, ginger, chia seeds (if using), honey or agave, frozen banana, and lime juice to the blender.
