ingredients:

for the crust:

  • 24 Oreos
  • 4 tablespoons coconut oil, melted
  • ¼ teaspoon kosher salt

for the pudding:

  • 1 egg
  • 2 cups extra creamy oat milk
  • ¼ cup sugar
  • 3 tablespoons cornstarch
  • ¼ teaspoon kosher salt
  • 1 cup chocolate chips
  • ½ teaspoon vanilla extract

for the topping:

  • 1 cup non-dairy whipped topping, whipped in a stand mixer using the whisk attachment until stiff peaks form
  • 2 tablespoons sugar
  • ½ teaspoon vanilla
  • A pinch of kosher salt
  • Crushed Oreo cookies (for garnish)

instructions:

1. prepare the crust:

  • Preheat the oven to 350 F.
  • In a food processor fitted with the S blade, pulse the Oreos until they’re finely ground.
  • Combine the crushed Oreos with the melted coconut oil and ¼ teaspoon of kosher salt.
  • Press this mixture firmly onto a pie plate to form the crust.
  • Bake in the preheated oven for about 10 minutes.

2. make the pudding:

  • In a medium pot, whisk together the egg, oat milk, sugar, cornstarch, and ¼ teaspoon kosher salt over medium-high heat.
  • Continue whisking for approximately 5 minutes.
  • Reduce heat to medium-low and let it simmer for another 2 minutes.
  • Remove the pot from the heat and stir in the chocolate chips and ½ teaspoon vanilla extract until the chocolate is fully melted and incorporated.
  • Pour this chocolate mixture over the prepared crust.

3. set the pie:

  • Place a piece of plastic wrap directly onto the surface of the pie to prevent a skin from forming.
  • Let it chill in the refrigerator for about 2 hours or until set.

4. prepare the topping:

  • In a stand mixer fitted with the whisk attachment, whip the non-dairy topping until stiff peaks form.
  • Add sugar, vanilla, and a pinch of kosher salt. Mix until well combined.

5. final touch:

  • Once the pie has set, spread the whipped topping evenly over the top.
  • Garnish with crushed Oreo cookies for added crunch and aesthetics.

chef’s note:

This Chocolate Pudding Pie is best enjoyed chilled. It offers a creamy, rich flavor complemented by the crunchy Oreo crust and whipped topping. The perfect dessert to satisfy your chocolate cravings!
