Ingredients:
For the Pickled Onions:
- 1 red onion, very thinly sliced
- ½ cup apple cider vinegar
- 1 tbsp sugar
- 1 tsp sea salt flakes
For the Spicy Yoghurt Sauce:
- 250 ml plain double cream yoghurt
- 1 clove garlic, finely grated
- 2 tbsp lemon juice
- 2 tsp Aleppo pepper (Notes provided at the end for substitution)
- 1-2 pinches sea salt
For the Mushrooms:
- 12 large portobello mushrooms
- 125 g butter, softened
- 125 g harissa paste
Extras:
- Store-bought flatbread / naan or pita
- Fresh coriander
- Lime wedges
Method:
- For the Quick Pickled Onions:
- Combine all ingredients in a glass jar and shake well, ensuring the onions are submerged.
- Leave at room temperature while preparing the rest.
2. For the Yoghurt Sauce:
- Mix all ingredients together, adjusting for seasoning if necessary.
- Store in the fridge until serving.
3. For the Mushrooms:
- Mix the softened butter and harissa paste until well combined. Check the seasoning of your harissa paste and adjust as required.
- Preheat the oven to 200°C (with fan on) and line a large baking tray with baking paper.
- Place portabellos on the tray and generously brush with harissa butter.
- Roast for 7-10 minutes or until just tender.
- While the mushrooms are roasting, warm or toast some flatbread and prepare the other toppings.
4. Serving:
- Serve the roasted mushrooms on warm flatbread topped with dollops of spicy lemon yoghurt.
- Garnish with fresh coriander leaves and pickled onions.
- Squeeze over fresh lime juice and enjoy!

Notes:
- Aleppo pepper is available at specialty delis, artisanal grocers, or spice stores. If you cannot find it, you can substitute with 1 tsp of sweet paprika mixed with ¼ tsp of cayenne pepper.
