Annemarie Rapp’s Lavender Shortbread: A Delightful Treat With A Hint Of Lavender

Annemarie Rapp’s Lavender Shortbread is a delightful twist on the classic shortbread cookie, incorporating the aromatic and floral notes of dried lavender. The recipe is simple, requiring only a few ingredients and straightforward steps. Below are some key aspects of the recipe:

Ingredients

  • 500 g flour
  • 250 g cornflour
  • 250 g castor sugar
  • 500 g butter (not margarine)
  • 1 ½ tsp dried lavender

Preparation Steps

Step 1: Sift the Dry Ingredients

Use a food processor to sift together the flour, cornflour, and castor sugar. This ensures that the dry ingredients are well-mixed and free from lumps.

Step 2: Add Butter and Lavender

Add the butter and dried lavender to the food processor. Pulse until the mixture resembles bread crumbs. The lavender will lend a floral note that complements the richness of the butter.

Step 3: Prepare the Dough

Transfer the crumbly dough into a baking tray, approximately 30 cm x 16 cm in size. Gently flatten the dough using your hands or a spatula.

Step 4: Prick and Sugar

Using a fork, prick holes throughout the dough. This helps the shortbread cook evenly. Sprinkle a layer of castor sugar over the top for added sweetness and a little crunch.

Step 5: Baking

Place the tray in a pre-heated oven at 140/160 °C (284/320 °F). Bake for at least an hour. The low and slow baking helps the shortbread to develop its characteristic crumbly texture.

Step 6: Cooling in Oven

Once the shortbread is firm to the touch, open the oven door but leave the shortbread inside to cool down gradually. This prevents the shortbread from becoming too hard or cracking.

Step 7: Cut and Cool Further

After it has cooled down in the open oven, remove the shortbread and cut it into your desired shapes. Then transfer the pieces to a cooling rack for further cooling.

Step 8: Final Touch

Once completely cooled, sprinkle extra castor sugar on top for a sweet finishing touch.
