  • 375g spaghetti
  • 150g sliced rindless prosciutto (or bacon as a substitute), cut into thin strips
  • 3 cloves garlic, crushed
  • 1/2 tsp dried chili flakes
  • 500g zucchini, coarsely grated
  • 1 cup finely grated parmesan, with extra for garnishing
  • 1 tsp finely grated lemon rind
  • 2 tablespoons lemon juice
  • 1/3 cup finely chopped fresh parsley
  • Salt and pepper, to taste
  • Oil, for frying


  1. Pasta Preparation: In a large stockpot, bring salted water to a boil. Add spaghetti and cook until tender. Once cooked, drain the water and return the pasta to the stockpot. Cover to retain warmth.
  2. Zucchini and Prosciutto Fry: In a large, deep, non-stick frying pan, heat oil over medium-high heat. Add the prosciutto and cook for approximately 2 minutes or until golden. Now, stir in the crushed garlic and chili flakes. Incorporate the grated zucchini to the pan and cook for an additional 2 minutes, ensuring the zucchini becomes just tender.
  3. Combining and Serving: Pour the zucchini mixture into the stockpot containing the pasta. Add in the parmesan, lemon rind, lemon juice, and freshly chopped parsley. Toss the ingredients well to combine, ensuring an even distribution. Season with salt and pepper according to your taste. Once plated, garnish with a sprinkle of extra parmesan cheese.
