- 4 ripe tomatoes, finely chopped
- 1 small red onion, finely chopped
- Handful of cilantro leaves, finely chopped (extra for serving)
- 2 avocados, halved, peeled, pitted, and diced
- 2 Little Gem lettuces or 3 cups shredded Iceberg lettuce, shredded
- Olive oil for drizzling

Directions:
- In a large saucepan, heat olive oil and sauté the onion until soft and translucent (about 8 minutes).
